Do amalgam fillings discolor teeth over time?

They can, yes. Another difference between the amalgam fillings & the composite fillings (besides the esthetics) is that the amalgam fillings just fill the hole & does not actually bond to the tooth. Where as the composite filling is bonded to the tooth chemically. =)
Yes, sometimes it can make the enamel look blueish/greyish. I wouldnt worry about back molars, but definetly anterior teeth cosmetically look better with the composite or white fills.
