What's a good dessert to offer to a diabetic senior citizen?

I like to take donuts up to my grandmother's assisted living facility on Saturday mornings. The seniors love it, but I've been warned not to give donuts to the residents who have been ID'd as diabetics. Are all baked goods off limits? or just baked goods with a glaze? I need something easy to handout while I'm doling out donuts.

My Grandmother also was a diabetic. There are all kinds of "sweets" that are safe but not made with sugar. In the candy isle or the specialty foods section of the grocery store there are sugar free candies. In the bakery they have sugar free pies. Ask the baker if there are deserts that they can make that would be easy to transport. They even have sugar free ice cream. I used to love to bring these special treats to her. She really appreciated them.

The holidays are here and shortbread has always been a part of them for me. I am diabetic now, so some adjustment had to be made.

This is a very quick and easy receipe that I use now:

SHORTBREAD

1/2 lb. ( 2 sticks) margarine, at room temp
1/2 cup sugar
1/2 cup rice flour or cake flour
1 3/4 all-purpose flour

1. In a mixing bowl, cream the margarine with the sugar until light & fluffy. Stir in flour just until blended. Preheat oven to 325F

2. Roll the dough out on a lightly floured board ( or between 2 sheets of wax paper ) to 1/4 inch thickness. Cut into 1 1/2 inch rounds.

3. Place the rounds on ungreased cookie sheets. Prick each with a fork. Bake until pale golden brown, about 22 - 25 mins.
cool on racks.

Prep time: 15 mins
Baking time: 25 mins

Yield: 20 servings
Serving size: 3 cookies
