I guess we just didn't know how good a cook "grandma" really
was when she wanted to ''shove that sour milk'', from that "cow
juice", down my throat, huh?
I made that once, not so long ago, sour milk, the ''curds & whey" thing...and now it doesn't seem so bad.
Ya take 1/2 gallon Real Fresh Cow's Milk, put it in a Gallon
Jar, and ''Shake that Bootie...I mean the Jar..til the Butter..
takes Shape, and ya remove the wad of butter...and shake
that Bootie (jar) again...and then let it set in a warm spot, and
curdle (couple of hours), and you have butter & sour (curd),,,
beat the whey, add salt to taste..thus yogurt is there..TF

The "friendly" bacteria called acidophilus help create a healthy environment within the gastrointestinal tract. Taking acidophilus may combat digestive disorders, control vaginal yeast infections, and help the body resist diseases caused by "unfriendly" bacteria.
Some 500 species of bacteria inhabit the digestive tract. Of these, the most beneficial are two strains of Lactobacilli bacteria: acidophilus and bifidus. Mix acidophilus/bifidus powder in water and drink; see label for exact dose. In capsule form, take one or two, each containing at least 1 billion live organisms, one to three times daily. For other forms, follow label directions.
Pro Biotics are Biotics that play on the professional circuit. They save you from agonizing over uneven performance from Amateur Biotics. (Nothing worse than a Biotic that doesn't know how to play the game.)

Probiotics contain bacteria. Basically, it's good bacteria that works with our body that makes us healthy and boost our immune system. I don;t think it can cure you of any major ailmanet but I know that it helps prevent getting a number of diseases and it lowers your blood pressure and cholesterol level.
Probiotics are friendly bacteria that live in your intestine and the intestines of all animals. These bacteria are responsible for digesting much of your food and they, fortunately kill the bad bacteria. If you are deficient in these bacteria, you will develop all kinds of problems. Americans have almost made the Acidopholus Infantalis probiotic extinct with antibiotics given to pregnant mothers. This bacteria is where people get natural immunities when breast feeding, but if the mother doesn't have it, then the baby won't get it. This combined with the deficiency most mothers have in omega 3 fatty acids causes babies to get ear infections and to have many neurological problems as children like ADD, etc.
I don't believe you can eat too much foods containing these great bacteria. Yogurt, sauerkraut, keifer milk, miso, etc. are all great foods for you. Miso is a soy product and because it is fermented is good for you, but avoid at all costs any soy products that are not fermented. They are terrible for you.

Another contributor mentioned Natren, which makes a very good probiotic with three strains of friendly bacteria in it.
I've bought it a couple of times. It is comparatively very expensive. Then one day I tried a product called PB-8.
PB-8 costs less than half of what Natrens' Healthy Trinity costs and it has eight strains of friendly bacteria. But more importantly, in my experience it also works far better because it has Inulin in it.
Inulin is a food for the friendly bacteria which enables the bacteria to survive better.
When you take PB-8, be prepared after a few days to have the largest bowel movement you've ever had in your life! And yet, it will be the easiest bowel movement...you might think you've hardly gone at all.
BTW, probiotics help with so many things. They are good for your skin, they help make B vitamins, they improve fecal transit time which helps to prevent cancer, they help to keep yeast under control, and they can help with bad breath.
In my opinion, if a person were limited to just one supplement, an excellent probiotic would be at the top of the list.
