Why do food producers refine sugar and rice? Why don't they leave them pure?

More appealing both in taste and appearance to the consumer thus ensuring larger sales ..... they're not really concerned about the fact that refined sugars and polished white rice and other white foods basically have little or no nutritional value whatsover their basic concern is for their large piece of the pie!! ....... Greed, I guess would be the answer to your question.... bout time people started thinking for themselves, good on you mate .. :0)

Refining these "white" foods creates inflammation in the body, which can lead to addiction. Thus, more of their product will be bought if the consumer base is addicted to the foods. American society isn't conditioned to eat quality, unprocessed foods, so a company that produces the "white" products will make a ridiculous amount of money, while other companies struggle to make capital with their health foods.
It's about shelf life. whole grains contain oils that go rancid quite quickly. by removing the oil and adding preservatives the food will linger on the shelf longer before spoiling, also until the masses clamor for unprocessed food it ain't gonna happen
They want to earn huge profit by cheating with the customer.
